How many people does a pound of pulled pork feed?
A pound of cooked pulled pork makes 4 sandwiches at 4 oz each, or feeds about 2 to 3 people as a main dish. That pound takes about 1.9 lb of raw bone-in pork shoulder.
How to work it out
- 4 guests = 4 adult portions
- 4 × 4 oz cooked × 1 (appetite & extra) = 1 lb cooked
- 1 lb ÷ 0.52 cooked yield = 1.9 lb raw
“A pound” means two different things at a barbecue: a pound of pulled pork on the table, or a pound of raw shoulder from the store. They feed very different numbers of people, because cooking takes away about half the weight.

- Bone-in pork shoulders often come two to a pack at warehouse stores. Several smaller butts cook faster than one huge one.
- Safe minimum temperature: pork roasts 145 °F + 3 min rest (pulled pork is cooked far past that to shred) (FoodSafety.gov). Perishable food should not sit out more than 2 hours (1 hour above 90 °F / 32 °C). Keep hot food at 140 °F (60 °C) or above and cold food at 40 °F (4 °C) or below (USDA FSIS).

|---|---|---|---|

| 1 lb raw boneless shoulder | about 2½ | about 5 | about 1½ |
The USDA Food Buying Guide says a pound of bone-in Boston butt, as purchased, gives 0.52 lb of cooked lean meat once the bone, fat and drippings are gone. So 1 lb of pulled pork needs about 1.9 lb of raw bone-in shoulder, or about 1.7 lb boneless. Flip it around and a raw pound feeds about two sandwich eaters.
Scaling it up
This is the number to use for quick math in the store. An 8 lb bone-in shoulder makes roughly 4 lb of pulled pork: sixteen sandwiches, thirty-odd sliders or about eleven generous plates. Two shoulders feed a backyard party of thirty sandwich eaters with a little to spare.
- Sandwiches: Iowa State Extension plans 3–4 oz of meat each, so 4 to 5 per cooked pound.
- Sliders: 1½–2 oz each, so 8 to 10 per cooked pound.
- Tacos and nachos: closer to 2–3 oz, as the toppings carry the plate.
- Kids: about half a portion.
