- a 12 to 14 lb whole turkey
- Cooked turkey you’ll carve (approx.)
- 6.4 lb
- Cooked turkey per adult (approx.)
- 8 oz
- Thawing in the fridge (smallest to largest bird in that range)

12 guests = 12 adult portions
12 × 1 lb (whole turkey) = 12 lb
× 0.53 cooked yield = about 6.4 lb of carved turkey, or 8 oz per adult

USDA’s Food Safety and Inspection Service gives a simple rule: allow 1 pound of turkey per person for a whole bird, or 1¼ lb for a frozen pre-stuffed one. That pound is raw weight with the bones, so it sounds like a lot until you carve it. Breasts carry less bone, so Nebraska Extension plans on ¾ lb of bone-in breast or ½ lb of boneless breast per person.
How the turkey size is worked out
turkey (lb) = (guests − ½ × children) × lb per person × appetite × (1 + leftovers) whole turkey 1 lb · pre-stuffed 1¼ lb · bone-in breast ¾ lb · boneless breast ½ lb
Children under about ten count as half a portion. The appetite setting nudges the total for a table of light or heavy eaters, and the leftovers setting adds a quarter or a half on top. Those two are planning choices rather than USDA figures — the USDA amount is the "average" and "none" setting.
Why a pound per person is not too much
A whole turkey is mostly bone, skin and juices. The USDA Food Buying Guide, which school kitchens use to plan portions, says 1 lb of whole turkey as purchased gives about 0.53 lb of cooked turkey with skin. So the 1 lb rule puts roughly 8 oz of carved turkey on the platter per adult — a generous plate with some to spare, not a mountain of leftovers. Bone-in breast yields more meat for its weight, about 0.64 lb per pound.
| Guests | Turkey (no leftovers) | With plenty of leftovers |
|---|---|---|
| 4 | 4–6 lb (or a breast) | 6–8 lb |
| 6 | 6–8 lb | 9–11 lb |
| 8 | 8–10 lb | 12–14 lb |
| 10 | 10–12 lb | 15–17 lb |
| 12 | 12–14 lb | 18–20 lb |
| 15 | 15–17 lb | 23–25 lb |
| 20 | 20–22 lb | two 15 lb birds |

Buying tips
- Frozen turkeys need days, not hours. In the fridge, thaw about 24 hours for every 4–5 lb. A 20 lb bird needs 4 to 5 days — see how long to thaw a 20 lb turkey.
- Check your oven and pan. Make sure the roasting pan and the bird fit in the oven with the door closed before the day, especially above about 16 lb.
- Fresh turkeys keep only a day or two. USDA says to buy a fresh turkey only 1 to 2 days before you plan to cook it, and not to buy fresh pre-stuffed turkeys at all.
- Big crowd? Above about 20 lb, consider two smaller birds, or a whole turkey plus a bone-in breast. They roast faster and more evenly.
- Think about the rest of the plate. The Thanksgiving dinner planner covers sides, rolls and pies for the same guest count.

Frequently asked questions
How much turkey per person do I need?
About 1 lb of whole turkey per person, by USDA’s rule of thumb — 1¼ lb if it is frozen pre-stuffed. For a bone-in breast, plan on about ¾ lb per person; for a boneless breast roast, about ½ lb.
How much turkey per person with leftovers?
Add a quarter to a half on top of the 1 lb rule: about 1¼ to 1½ lb of whole turkey per person. That is a planning choice; set the leftovers option and the calculator adds it.
How much cooked meat does a turkey give?
About half its weight. The USDA Food Buying Guide gives 0.53 lb of cooked turkey with skin per pound of whole turkey (without the neck and giblets), so a 14 lb bird carves to roughly 7 lb.
Is it better to buy one big turkey or two small ones?
For more than about 20 guests, two smaller birds are often easier: they fit standard pans, roast in less time and cook more evenly. USDA’s roasting chart covers turkeys up to 24 lb.
How much turkey for kids?
Count young children as about half a portion. A table of 8 adults and 4 small kids plans like 10 adults: about 10 lb of whole turkey.
