How much pulled pork for 50 people?
For 50 people eating pulled pork sandwiches (4 oz each, plus 10% extra), plan on 13.8 lb of cooked pork — about 26.4 lb of raw bone-in pork shoulder. That fills 55 buns.
How to work it out
- 50 guests = 50 adult portions
- 50 × 4 oz cooked × 1.1 (appetite & extra) = 13.8 lb cooked
- 13.8 lb ÷ 0.52 cooked yield = 26.4 lb raw
Pulled pork is the default for a graduation party, a reunion or a church picnic: it holds well, it stretches, and one cook can make enough for fifty. The number that trips people up is the raw weight — a bone-in shoulder loses about half of itself to the bone, fat and cooking.

- Bone-in pork shoulders often come two to a pack at warehouse stores. Several smaller butts cook faster than one huge one.
- Safe minimum temperature: pork roasts 145 °F + 3 min rest (pulled pork is cooked far past that to shred) (FoodSafety.gov). Perishable food should not sit out more than 2 hours (1 hour above 90 °F / 32 °C). Keep hot food at 140 °F (60 °C) or above and cold food at 40 °F (4 °C) or below (USDA FSIS).

From 50 sandwiches to a shopping list
Iowa State Extension plans 3 to 4 oz of meat per sandwich. At 4 oz for fifty guests, plus 10% for seconds, that is about 13¾ lb of pulled pork. The USDA Food Buying Guide gives 0.52 lb of cooked lean meat for every pound of bone-in Boston butt, so you need about 26½ lb raw — three or four 7 to 9 lb shoulders, or two of the twin packs warehouse stores sell. Boneless shoulder yields 0.60, so about 23 lb would do.
| How it’s served | Cooked pork | Bone-in shoulder to buy |
|---|---|---|
| Sliders, 2 oz | about 7 lb | about 13 lb |
| Sandwiches, 4 oz | about 13¾ lb | about 26½ lb |
| Plates, 6 oz | about 20½ lb | about 40 lb |
Cooking that much pork
- Split the load. Three or four shoulders fit most large smokers or two ovens; each 8 lb butt is a long, slow cook, so start the day before or cook ahead.
- Cook ahead and reheat. Pull the pork, cool it in shallow pans, refrigerate within 2 hours, and reheat covered with a splash of the juices to 165 °F.
- Hold it hot. A roaster or slow cookers at 140 °F or above keep it safe and moist on the buffet.
- Buns: 55 sandwich buns — seven packs of eight.
