How big of a turkey for 12 people?
For 12 people, plan on 12 lb of whole turkey, so look for a 12 to 14 lb whole turkey. It needs 2½ to 3½ days to thaw in the fridge.
How to work it out
- 12 guests = 12 adult portions
- 12 × 1 lb (whole turkey) = 12 lb
- × 0.53 cooked yield = about 6.4 lb of carved turkey, or 8 oz per adult
Twelve guests usually means two tables and at least one teenager. A 12–14 lb turkey is the sweet spot: big enough for everyone with a little left over, small enough to thaw in three days and roast in a normal afternoon.

Why 12 to 14 lb works for twelve
At USDA’s 1 lb per person, twelve guests need 12 lb. Rounding up to a 13 or 14 lb bird adds a buffer for the teenagers and second helpings without pushing you into the slower-cooking 18 lb-plus range. By the Food Buying Guide yield of 0.53, a 14 lb turkey gives about 7½ lb of carved meat — around 10 oz per guest before leftovers.
If the guest list includes several big eaters, set the appetite to big eaters (a quarter more) and the answer moves to about 15 lb. For leftovers on top, half again takes it to 18 lb — at which point a 12–14 lb turkey plus a 6 lb bone-in breast is easier to handle than one large bird, and both fit in a standard oven at once.
Fitting it into the day
- Thawing: about 3 days in the fridge for 12–14 lb, or 6 to 7 hours in cold water, changing the water every 30 minutes.
- Roasting: USDA allows 3 to 3¾ hours unstuffed at 325 °F (163 °C) for a 12–14 lb turkey, 3½ to 4 hours stuffed.
- Oven space: the turkey takes the oven for most of the afternoon, so plan sides that can bake while it rests or go in a slow cooker.
- Carving: two people carving at once gets a 12-person table served while it is still hot.
