How long to thaw a 12 lb turkey?
A 12 lb turkey takes 2½ to 3 days to thaw in the refrigerator, or about 6 hours in cold water. For a Thursday dinner, start by Monday, 3 days ahead.
How to work it out
- Fridge: 12 lb ÷ 5 lb per day = 2.4 days; ÷ 4 lb per day = 3 days → 2½ to 3 days (rounded up to the half day)
- Cold water: 12 lb × 30 minutes = 6 hours
A 12 lb turkey is the size for eight people with leftovers or ten without. It falls right on the line between the first two rows of USDA’s thawing table, so plan on the full 3 days in the fridge.
Adjust for your project

- Monday, 3 days ahead
- Keep it in its wrapper on a tray to catch drips, in a fridge at 40 °F or below. Once thawed, it can stay in the fridge 1 to 2 more days before cooking.
- Forgot to thaw? You can roast a turkey from frozen; USDA says it takes at least 50% longer than a thawed one. Never thaw on the counter.

Why 12 lb means three days, not one
USDA’s first row covers turkeys from 4 to 12 lb and gives 1 to 3 days, which is a wide range. The rate behind it — 24 hours per 4 to 5 lb — puts a 12 lb bird at 2.4 to 3 days, so the bottom of that row only applies to small birds and breasts. Count on three days: Monday morning for a Thursday dinner, or Sunday if your fridge is crowded and cold air cannot get around the turkey.
A whole bone-in turkey breast of 6 to 8 lb thaws faster, in a day and a half to two days by the same rate. It is a good plan B if you only remember on Tuesday.
The cold-water rescue for a 12 lb turkey
Six hours is manageable on the day, as long as someone is home to change the water — never leave it soaking overnight. Start early in the morning, keep the bird in a leak-proof bag, submerge it in cold tap water in a clean sink or cooler, and change the water every half hour — about a dozen changes. Then roast immediately: USDA puts an unstuffed 8–12 lb turkey at 2¾ to 3 hours at 325 °F (163 °C), so a 6 a.m. start can still mean a mid-afternoon dinner.
- Cold, not warm. Warm water thaws the skin while the inside stays frozen and lets the outer layer sit in the bacteria range.
- Fully submerged. A floating bird thaws unevenly; weigh it down with a plate.
- No refreezing. Once thawed in water, cook it.
A 12 lb turkey is what how big a turkey for 8 people with leftovers recommends. For a bigger bird, see how long to thaw a 15 lb turkey.
