How long to thaw a 15 lb turkey?
A 15 lb turkey takes 3 to 4 days to thaw in the refrigerator, or about 7½ hours in cold water. For Thursday dinner, put it in the fridge by Sunday, 4 days ahead.
How to work it out
- Fridge: 15 lb ÷ 5 lb per day = 3 days; ÷ 4 lb per day = 3.75 days → 3 to 4 days (rounded up to the half day)
- Cold water: 15 lb × 30 minutes = 7.5 hours
A 15 lb turkey feeds twelve to fifteen at USDA’s pound per person. It sits in the 12-to-16 lb row of USDA’s thawing table: 3 to 4 days in the fridge, or 6 to 8 hours in cold water.
Adjust for your project

- about 7½ hours
- For a Thursday dinner, start thawing
- Sunday, 4 days ahead
- Keep it in its wrapper on a tray to catch drips, in a fridge at 40 °F or below. Once thawed, it can stay in the fridge 1 to 2 more days before cooking.
- Forgot to thaw? You can roast a turkey from frozen; USDA says it takes at least 50% longer than a thawed one. Never thaw on the counter.

Fridge or cold water for a 15 lb bird?
| Refrigerator | Cold water | |
|---|---|---|
| Time | 3 to 4 days | about 7½ hours |
| Start for a Thursday dinner | Sunday or Monday | early Thursday morning, about 7½ hours before it goes in the oven — never overnight |
| Attention needed | none | change the water every 30 minutes |
| If it thaws early | keeps 1 to 2 days | cook immediately |
The refrigerator is the low-effort route: move it on Sunday, forget about it, and it is ready on Thursday with a day to spare. Cold water is the rescue plan, but at 7½ hours with fifteen water changes it takes most of a day and a sink you will not be able to use for anything else. Because the water needs changing every 30 minutes, cold-water thawing is a daytime job: never leave a turkey soaking unattended overnight. Start early on Thursday and roast it as soon as it has thawed — or, if you thaw and roast it on Wednesday, carve it, refrigerate the meat within 2 hours and reheat it to 165 °F (74 °C) on Thursday (USDA FSIS).
Checking it is really thawed
- Press the thick part of the thigh. It should give, not feel like a brick.
- Feel inside the cavity. Ice crystals in the cavity mean another few hours in cold water.
- Wiggle a leg. If the joint moves freely, the bird is thawed enough to roast.
- Take out the giblets from both ends — the neck often hides in the body cavity and the giblet bag in the neck end.
Then roast it: how long to cook a 15 lb turkey has the times. For the bigger bird, see how long to thaw a 20 lb turkey; for the smaller one, how long to thaw a 12 lb turkey.
